  • ½ cup Mayo
  • 2 tsp prepared mustard
  • 1 tsp lemon juice
  • 2 tbs honey
  • 1 tbs smokey BBQ sauce
Instructions

BLT dip

Ingredients:
1-1/2 pound bacon, cooked, drained, crumbled, and divided
2 cups shredded mozzarella cheese
2 (8-ounce) packages cream cheese, softened
1/2 cup sour cream
1/4 cup mayonnaise
1 cup cheddar cheese (shredded) or to taste
1/2 teaspoon Italian seasoning
1/2 teaspoon garlic powder (or to taste)
1 tablespoons mustard
2 cups chopped seeded tomatoes
1-1/2 cup shredded Iceberg lettuce
pepper an salt to taste

Toasted bread rounds, crackers, or pita chips.

Directions:

Preheat oven to 350˚. Spray a 11⁄2-quart baking dish with nonstick cooking spray.

Set aside 3/4 cup crumbled bacon.

In a large bowl, combine remaining bacon, cream cheese, shredded cheeses, sour cream, mayonnaise, Italian seasoning, garlic powder, salt, pepper, and mustard. Spoon mixture into prepared baking dish. Bake for 25 to 30 minutes or until hot and bubbly. Sprinkle chopped tomatoes, remaining 3/4 cup crumbled bacon and lettuce over hot dip. Serve immediately with toasted bread rounds, crackers, or pita chips.

Lemon Blueberry Bread

Ingredients

  • 2 cups all purpose flour
  • 1 ½ tsp baking powder
  • ½ tsp salt
  • 1 stick unsalted butter, room temperature
  • 1 cup sugar
  • 2 eggs
  • 2 cups blueberries (12 oz)
  • 2 tsp lemon zest
  • ½ cup plain yogurt, regular or lowfat

Directions

  1. Preheat your oven to 350 degrees. Spray a loaf pan with nonstick cooking spray and set aside.
  2. In a medium sized bowl, whisk together your flour, baking powder and salt. Add the blueberries and lemon zest and toss to combine.
  3. Cream together the butter and sugar until light and fluffy. Add the eggs, one at a time, beating well after each addition. Add the yogurt then the dry ingredients, mixing only until incorporated and being careful not to crush the blueberries.
  4. Scoop batter into your prepared loaf pan and bake for 1 hour 10 minutes, until golden brown. Let cool in the pan for 10 minutes before inverting gently onto a plate.
Yield: makes 1 loaf

Cheesecake Lemon Bars


Ingredients:

  • 1 1/2 cups all-purpose flour
  • 1/2 cup confectioners' sugar
  • 3/4 cup unsalted butter, cut into cubes
  • 4 eggs
  • 1 1/2 cups white sugar
  • 1 tablespoon all-purpose flour
  • 1 tablespoon lemon zest
  • 1/2 cup lemon juice
  • 2 (8 ounce) packages cream cheese, softened
  • 1 cup white sugar
  • 2 eggs, beaten

Instructions:

Preheat an oven to 350 degrees F (175 degrees C). Lightly butter a 9x13-inch baking dish.

Whisk together 1 1/2 cup flour and confectioners' sugar in a mixing bowl. Cut in the cold butter with a knife or pastry blender until the mixture resembles coarse crumbs. Press the crumbs into the bottom and up the sides of the prepared baking dish to form a crust.

Bake in the preheated oven until golden brown, 15 to 18 minutes. Remove from oven, and set aside.

Whisk together 4 eggs, 1 1/2 cup sugar, 1 tablespoon flour, lemon zest, and lemon juice in a bowl. Pour lemon mixture into the prepared crust. Skim off any bubbles from the surface of the filling. Mix the cream cheese and 1 cup sugar in a bowl until well blended. Whisk in 2 eggs, then spread over the lemon mixture. The mixtures will separate during baking.

Bake in the preheated oven until the filling is set, about 30 minutes.

Sweet Potato and Sausage Frittata

This hearty, protein-packed egg dish is perfect for breakfast or lunch. It’s gluten-free, grain-free, and dairy-free and will keep you satisfied till your next meal.

Cook Time: 55 minutes

Ingredients:

  • 2 medium sweet potatoes, baked
  • 8 turkey breakfast sausage links, cooked
  • 2 green onions, chopped
  • 8 large eggs
  • Salt and pepper
  • 1 clove garlic, minced

Instructions:

  1. Spray a 9-inch deep-dish Pyrex pie plate with nonstick pan spray. Preheat oven to 350 F.
  2. Peel baked sweet potatoes and slice into rounds. Layer in baking dish.
  3. Slice sausages and scatter over sweet potatoes. Sprinkle with chopped green onions.
  4. Beat eggs with salt and pepper, add minced garlic. Pour eggs over sweet potatoes and sausages in pie plate.
  5. Bake at 350 F until set and knife inserted in center comes out with only clear moisture on blade, about 45-55 minutes.
  6. Let stand 5 minutes before serving. Keep leftovers tightly wrapped and refrigerated and use within 3 days.

Crockpot Oatmeal


Place 3 sliced apples, 1/2 cup brown sugar, 2 tsp cinnamon, pinch salt in the bottom of the crock pot.
Pour in 2 cups of oatmeal, 2 cups of milk and 2 cups water.
Do NOT stir.
Cook overnight for 7 - 9(varies with different crockpots) hours on low.
Do not use quick oats
You have to use steel cut oats

Pecan Pie Cupcakes

Pecan Pie Cupcakes

Ingredients:

1 cup chopped pecans
1/2 cup all-purpose flour
1 cup packed brown sugar
2/3 cup butter, melted
2 eggs

Directions:

Preheat oven to 350 degrees.

In a medium bowl, combine all ingredients and mix well.

Spray a miniature muffin tin with non-stick cooking spray. (The spray with flour in it works best!)

Fill each 3/4 full.

Bake in preheated oven for approx 18 minutes.

NOTE: Generously spray your pan with cooking spray with flour. Once they come out of the oven let them cool for one minute then flip them out onto a cooling rack. If they cool in the pan they'll have to be chiseled out.

Also don't fill the pan to the very top, they will overflow if you do.
