Egg nog fudge

 2 cups white chocolate

1/2 cup butter

1 can condensed milk

1/2 cup eggnog

1/4 tsp cinnamon

1/4 tsp nutment

1 tsp vanilla

1 tsp rum (or more to taste)

instructions

In microwave, melt chocolate over medium heat til smooth.

Add condensed milk and blend well.

Add all other ingredients and stir well.

Pour into an 8 x 8 pan lined with parchment paper or a silicon pan.  Smooth.  Sprinkle nutmeg on top.

Let cool on counter for 15 minutes, then refrigerate til firm (about 4 hours)


Margarita fudge

 Ingredients

2 bars of high quality white chocolate (I use Turin)

1 can condensed milk

1 tsp lime extract

2-3 tsp tequila extract (or to taste)

rock salt and lime zest for decorating

Instructions

Melt white chocolate on medium heat in microwave in 30 second intervals until smooth.

Add in condensed milk and stir well.  Add in the extracts.  Taste to make sure you are pleased with the result.

pour and smooth into an 8x 8 inch pan.  If using a regular pan, line with parchment to prevent sticking. I use silicone pans.

Sprinkle rock salt and lime curls or zest on top.  Let cool on countertop for 15 minutes. Then refrigerate for 4 hours.

*** You can susbstitute actual tequila for the extract ***

Basic 3 ingredient fudge recipe

 12 oz chocolate - I prefer chopping up good quality chocolate bars but you can use chips.

1 14 oz condensed milk

1/4 tsp vanilla

1 tbs butter (optional) - melting this with the chocolate will make it smoother and creamier


Melt chocolate and butter (if using it) in microwave in 30 second intervals, stirring after each interval, until smooth.

Add condensed milk and stir throughly.  Add in vanilla.

Pour into 8 x 8 pan and let cool on counter for 15 minutes then in refrigerator for 4 hours.

If using white chocolate, reduce microwave power to medium to avoid burning your chocolate.
