One Bowl Apple Cake

Ingredients:
2 eggs
1 3/4 cups sugar
2 heaping teaspoons cinnamon
1/2 cup oil
6 medium Gala or Fuji or Honey Crisp apples
2 cups flour
2 teaspoons baking soda

Directions:
Preheat oven to 350°. In a large bowl, mix the eggs, sugar, cinnamon and oil. Peel and slice the apples and add to mixture in bowl (coating as you go to keep apples from turning brown.) Mix together the baking soda and flour and add to the ingredients in the bowl. Mix well (best with a fork) until all of the flour is absorbed by the wet ingredients. Pour mixture into a greased one 9x13 or two 9″ round pans. Bake for approximately 55 minutes.

  1. This is super easy. The house smells soooo good while it is baking and the end product is yummy, warm or cold!

  4. Is there a step/steps missing? After 55 minutes, it was still soupy in the middle, AND it bubbled up over the top of my round cake pan. I am glad I had the foresight to put it on a cookie sheet before I put it in the oven.

  5. Okay, I have made this twice. Each time, the color is dark brown instead of light brown in the photo. I turned my oven down and added less cinnamon, Still dark.
    It's moist, just not a pretty color.

  6. I did it in my bundt pan. Remember it takes more time because it's a thicker layer. Moist --good color and tasty. Easily another 15 minutes.

  7. Loved it, used 1/4 c oil + 4 tbs butter, 3 large honey crisp apples, baked in 6x10" Pyrex pan, simply delicious

  8. Oh, and I lightly creamed the butter and oil 1st then added eggs 1 at a time, then added apples and folded in flour, soda

  9. I added some clove and cardamom for more depth of flavor. Very easy but too much sugar - will cut it back to 1 cup next time.
