Ingredients:
2 lbs chicken (breasts, tenders ,or thighs)
1 1/2 cup Panko Bread Crumbs
2 tbs. Herbes de Proveance (can substitute an Italian blend if you wish)
1 cup Italian cheese mix (mine contains Mozarella, Parmesian, Asagio, and Romano) plus 1/2 cup
1 egg
1/4 cup milk
non stick spray
Preheat oven to 400 degrees.
Make a wash by beating egg with milk in a shallow bowl.
Mix bread crumbs, herbs, and cheese together in a shallow dish for dredging.
Dip chicken in wash, then dredge through crumb mixture- pat in well.
Place on baking sheet line with aluminum foil that you have sprayed with a non stick spray (I use olive oil)
Cover with more foil
Bake for 30 -35 minutes
Remove foil. Sprinkle each piece with more cheese.
Switch oven to broiler, and put chicken under broiler until cheese is melted.
Serve with mariana sauce if desired.
